QUOTE OF THE DAY:

-CARRIE UNDERWOOD
HEALTHY SNACK:

Peanut Butter Apples

Candy and caramel apples have a tendency to put your sweet tooth in overdrive (hello, cavities!). This healthier version uses peanut butter to add a bit of nutrition to this classic carnival treat.

Ingredients: makes 8 pops

  • 4 graham cracker sheets
  • 1 cup creamy peanut butter
  • 4 large apples, halved
  • 8 ice cream sticks

  Directions:

  1. Line a baking sheet with parchment paper or foil.
  2. Place graham crackers in a plastic bag and using a rolling pin, gently crush into course crumbs. Pour onto a plate and set aside.
  3. Place peanut butter on another plate.
  4. Insert an ice cream stick into each apple half.
  5. Dip apple halves into peanut butter until evenly coated, then roll in graham crumb mixture.
  6. Place each apple pop on the prepared baking sheet and freeze at least 30 minutes, then transfer to an airtight container.

Chef’s note: If you have an allergy to peanut butter, use Sneaky Chef No-Nut Butter.

CHALLENGE OF THE DAY:

As a part of their fall decorations, the first through third grade group from the Grady-White Boats/E.R. Lewis Family Unit created a wreath with leaf cut-outs that they colored and cut-outs of their own hands that they decorated.

All you need for this project is some poster board cut into the shape of a wreath, plain white paper for tracing your hands, pictures of leaves, glue, and markers or colored pencils.
